Sautéed cilantro-lime shrimp and melted cheese taco, served with cabbage & lime on a corn tortilla.
Ingredients
- Cilantro Lime Shrimp
- 2 tbsp. extra-virgin olive oil
- 4 garlic cloves, grated
- 2 limes, zested and juiced
- 1/2 tsp salt
- 1 tsp ground black pepper
- 1 lb. tail-on shrimp, peeled and deveined
- 3 tbsp. unsalted butter
- 1/2 cup chopped cilantro
- Tacos
- 6″ corn or flour tortillas
- 1 bag of coleslaw mix
- 8 oz shredded cheese (white cheddar or queso blanco)
- 8 oz sour cream
Instructions
Cilantro Lime Shrimp
- In a large skillet over medium heat add olive oil and garlic.
- Sauté for 1 minute.
- Add lime zest and juice, 1 teaspoon salt, 1/2 teaspoon black pepper, and shrimp.
- Cook until shrimp is pink, about 2-5 minutes.
- Turn off heat and add butter and cilantro.
- Stir until butter is melted and creates a smooth and silky sauce.
- Add more salt and pepper as needed
Tacos
- Scoop a spoonful of the sauteed onto a tortilla
- Sprinkled cheese and coleslaw mix ontop
- Dab on some sour cream
- Serve hot
