Ah, Sunday morning! You’re still half asleep, but hungry for breakfast with no idea what to make! Your kids are tugging on your pajamas wanting something for breakfast to eat, but you only want to serve them something healthy and you know they’re picky. You’ve also been staring at that muffin tin you got years ago and haven’t used since, and wonder to yourself, “how can I solve my family’s hunger for breakfast?” This recipe will solve all those dilemmas, and also can help you plan ahead for breakfasts later in the week (REMEMBER…IMPROVISE).
This recipe is quick, easy, INNOVATIVE, healthy, kid friendly, and fun. It only take a few ingredients, a muffin tin, and your oven and it’s ready in about 15 minutes. You can make as many cups as you want, refrigerate or freeze for later use, or eat them fresh right out of the oven. Happy baking!
- 6 eggs
- 6 slices ham
- cooking spray
- Set oven to 350 degrees
- Spray cups in muffin tin with cooking spray so cups wont stick
- Line each cup with piece of ham or favorite deli meat to form cups
- Crack one egg in each cup
- Bake in oven for about 15 minutes or until desired doneness
