Healthy fish recipes! This is what we had in our Improv Oven today. Oven baked flounder, a lean and flaky fish that is usually pan fried, but can also be grilled, battered and fried, and in our case today, baked! Our flounder recipe is simple but also delicious and is topped with a fresh tomato salad that can also substitute as a great salsa.
Bake for about 20 minutes at 450 degrees
The tomato salad is optional, but goes great with the fish. You can also try roasting the veggies for a few minutes for added flavor and texture.
Serve is with a side of rice.

- For Flounder
- Flounder Fillets (2-4)
- 1 tbs olive oil (or melted butter for added flavor)
- 1 lemon juiced (about 2-3 tbs)
- salt and pepper to taste
- For Tomato Salad
- 2 plum tomatoes, diced
- 1/4 medium onion, chopped
- 1/4 cup fresh cilantro chopped
- 1 tbs olive oil
- 1 clove garlic, chopped
- salt and pepper to taste
- Heat oven to 450 degrees
- Coat baking sheet or baking dish with olive oil or melted butter.
- Sprinkle salt and pepper on flounder fillets. Lay flounder fillets on dish and pop in oven for 20-25 minutes. Should be firm to touch and edges begin to brown and crisp. Remove from oven and squeeze lemon juice on flounder fillets.
- Combine all ingredients in a bowl and mix together. Serve on top of flounder. Serve immediately.
