A very similar recipe to our bacon egg and cheese wrap once again hitting on the high notes that we…love…bacon. Bacon in the morning, bacon in the evening, bacon all day. If I could wear clothes made out bacon I would, I love bacon that much. Like a hat or something stylish. I digress. Everyone is always looking for new breakfast ideas and this one only uses only 4 ingredients, is super easy to make and tastes delicious. How easy is that? Feel free to modify, but stick to basics, use fresh croissants (which we recommend) or other high quality breads, good cheese and quality bacon.
- 4 strips bacon, cut into pieces
- 2 eggs
- 1 croissant
- 1 slice cheddar cheese
- On medium heat, fry bacon on skillet or frying pan until crispy, about 5-10 minutes. Remove bacon from frying pan and drain excess fat
- Beat eggs in mixing bowl. Pour eggs onto same frying pan on medium heat. As eggs begin to set, begin to gently pull eggs across to pan to form curds. Continue cooking the eggs and gently pull and fold the eggs until they begin to set. Continue this process until no liquid remains. Do not stir constantly. About 2 minutes. Add cheese on top of scrambled eggs to begin melting and remove from heat. Leave pan on stovetop still on medium heat.
- Place half of croissant on flat surface. Add eggs with cheese and bacon onto the half. Place the other end on top to form a sandwich. Serve hot.
