There’s nothing better than coming up with easy and economically friendly meals that your family will love, especially if you’re a meat and potatoes kind of family. For those who consider themselves to prefer hearty home cooked meals — like our shepherd’s pie, then this recipe will meet your expectations.
And when we say easy, we mean it. This one-pot, meat casserole is one of the most simple and best shepherd’s pie recipes you’ll find online. The best part is; it takes only a handful ingredients to complete within only about an hour of your time. This recipe tastes great, is full of distinctive and rich, robust flavor, and is sure to fill up some empty, (and happy) stomachs. We hope you enjoy making, and tasting our shepherd’s pie!
- 2 1/2 lbs of potatoes, peeled and boiled (see instructions)
- 1 cup sour cream
- 2 lbs ground beef
- 1 sweet red pepper, chopped
- 1/2 Vidalia onion, chopped, (about 1/2 cup)
- 1 can whole kernel corn (15.25 ounces), drained
- 1 can cream of mushroom soup (10.75 ounces)
- 1/2 cup whole milk
- 2 tbs butter, melted
- salt and pepper to taste
- 2 tsp garlic salt
- optional: chopped parsley to garnish
- Place the potatoes in a large saucepan or pot. Add enough water to cover the tops of the potatoes. Add 1/2 to 1 teaspoon salt to the water.
- Turn the burner on high and bring water to boiling. Reduce heat to medium low or low. Cover the pot with a lid. Cook the potatoes in gently boiling water until tender, about 15 minutes for cubed potatoes and new potatoes and 20 to 25 minutes for quartered potatoes.
- Drain the potatoes in a colander.
- Mash potatoes with sour cream. Add butter, salt and pepper, and set aside.
- In a skillet on medium heat, cook ground beef, peppers, and onions until meat has browned and vegetables are tender.
- Add corn, cream of mushroom soup, milk and garlic salt to skillet, mix until well combined.
- Add meat mixture in a non-greased 3 quart baking dish (13in x 9 in). Top with mashed potatoes.
- Bake uncovered at 350 degrees for 30 minutes or until cooked through.
- Sprinkle with chopped parsley. Serve hot
