This fantastic recipe uses the same directions to fry our chicken as our famous fried chicken tenders. It’s super easy and only requires three ingredients to fry the chicken! The only thing we are substituting is the cut from the chicken, using dark meat instead of white meat. Today we’re using boneless and skinless chicken thighs. Chicken thighs are fattier cuts from the chicken which means that the pieces won’t dry out as easily when you fry them giving you a juicy texture and great flavor. We’re also using the coleslaw recipe from our pulled pork sandwich recipe to top our sandwich which we highly recommend trying as well.
- 1/2 cup vegetable oil, separated in 2 parts
- 1 lb boneless skinless chicken thighs
- 1/2 to 1 cup seasoned italian breadcrumbs
- 4 buns
- Optional
- 1/4 cup Apricot-Habanero Chutney (or your favorite sauce
- 1/4 cup pickles
- coleslaw
- Take out your three ingredients: Vegetable Oil, Italian Herbs Infused Bread Crumbs & Chicken. (Optional addition, your favorite side sauce for accompaniment.)
- Place 1 part oil in a mixing bowl, and bread crumbs in another mixing bowl. Make sure chicken is fully thawed and patted down dry.
- Heat up a pan on the stovetop, on medium, with the other part of vegetable oil. Wait until it gets lightly bubbly and steaming, heat to 350 degrees.
- Take a thawed, chicken thigh and dredge it in the oil in the bowl you’ve set aside. Remove the chicken from the oil and then dip it in the breadcrumbs and be sure to completely coat the chicken thigh with the breadcrumbs. Repeat the process until each piece is full coated with breadcrumbs.
- Cook in frying pan equally on each side until fully cooked or internal temperature reaches 165 degrees. About 10 minutes.
- Serve hot on buns, top with coleslaw, pickles, and your favorite sauce.
