Yes, we know what you’re thinking. Avocado on toast? We really need a recipe for that? It’s like pouring milk onto cereal, right? Well not so fast. We love taking photos of our food Improv Oven, and as simple as this was for our breakfast this morning, we wanted to share. Avocados are super healthy and when ripe are a creamy green gift from the heavens. Make sure you used some good, grainy and seed filled bread, toast it up and enjoy with this delicious avocado spread and time of the day.

Avocado on toast. Creamy avocado spread with basil pesto, chopped spinach, topped with cherry tomatoes.
Ingredients
- 2 pieces of whole grain bread
- 2 avocados
- 2 tbs basil pesto
- 2 tbs chopped spinach
- 4 cherry tomatoes, sliced in half
- salt and pepper to taste
Instructions
- Toast bread to desired crispness
- Cut avocados in half, removing seeds and scooping out each half in a bowl
- Add pesto and spinach and mix together
- Spread avocado mixture on toast and top with cherry tomatoes
- Add salt and pepper as needed
